Today we had a very fine lecture on infectious gastroenteritis by one of the top minds in the medicine department.  On one of the summary slides, Dr. Diarrhea listed some of the causative organisms and culinary sources of infection- and he was very careful that each of the bullet points be limited to one line, shortening some of the words in a few factoids to keep them from spilling over.  It’s just that a few of the words he choose to shorten were…unfortunate.  But, oddly enough, what’s written is true.

Causes of Bacterial GE

  • B. cereus – associated with rice
  • V. parahemolyticus – assoc w/ undercooked seafood
  • E. coli – ass w/ undercooked, processed beef product
  • Salmonella spp – ass w/ undercooked poultry and eggs
  • C. jejuni – ass with undercooked poultry and raw milk
  • Y. enterocolitica – ass w/ undercooked meat products
